This is one of my new favourite meals: Vegan Spaghetti Bolognaise.
1/3 packet of spinach spaghetti
1 finely chopped onion
1 clove garlic
tomatoes, or canned tomatoes, or even ready cooked pasta sauce
soya protein chunks/soya mince
basil, salt, pepper, oregano.
For the sauce:
Soak the soya protein chunks in water 10 minutes before cooking.
Heat a pan, and add olive oil. Add your finely chopped onion, and crushed garlic.
Let your onions soften, then add 2 blended fresh tomatoes, or a can of tomatoes, along with tomato puree. Let cook for a bit until thickened.
Add basil, pepper, salt, and oregano.
Add your soya chunks, and let cook until your chunks are cooked all the way through.
Boil your spaghetti.
