Gluten-free buckwheat noodles with chickpeas and spinach:
Make sure your chickpeas are cooked before hand.
Put your noodles/spaghetti on boil
Sautee the onions and garlic in olive oil until lightly browned and then add your sun dried tomatoes, and then the spinach, and then the chickpeas… etc until everything is incorporated and cooked.
Voilla - you have a delicious vegan mess!
