My name is irrelevant. This blog is symbolic of my new beginning. In the past I have been unhealthy. I have treated my body in ways unforgivable and this is me changing that. I have lived in fear for so long, and I am not going to anymore. This blog follows my pursuit of Health, Happiness, Love and my spiritual/emotional development.

Gluten-free buckwheat noodles with chickpeas and spinach:

Ingredients:
1 diced red onion/ half if it is very large
1 clove crushed garlic
1 1/2 cup chickpeas ( I soaked mine for 30 minutes and then used the pressure cooker, but if you don’t have a pressure cooker you should soak them over night, or you can you canned ones, but go for the ones with the lowest sodium content).
2 heads of fresh spinach
sun dried tomatoes
1 fresh chilly or chilly flakes
ground black pepper
salt (optional - although I don’t use it)
spaghetti/noodles of choice
Method:
Make sure your chickpeas are cooked before hand.
Put your noodles/spaghetti on boil
Sautee the onions and garlic in olive oil until lightly browned and then add your sun dried tomatoes, and then the spinach, and then the chickpeas… etc until everything is incorporated and cooked.
Voilla - you have a delicious vegan mess!
